So recently I stumbled across this amazing and ridiculously simple pudding recipe. And of all things, it has avocado in it! At first I was like…um…WHAT?!? But I’ve learned that everything is worth trying at least once. Even if it sounds crazy. And I was completely stunned when I took my first bite of this pudding.
It tastes so insanely creamy and wonderful, and even though it was just pudding, to me it felt and tasted like I was having ice cream! So I made another batch and threw it in my ice cream maker and it was the most wonderful ice cream ever!!! And I’ll have you know, I’ve made a bunch of really amazing ice creams in that ice cream maker! 🙂 I even did a blog post about it!
Another thing that’s so great about this recipe is that it’s SO quick and easy to do. If you have a blender (I use my Nutribullet) then you just place all the ingredients in the blender and it does the work for you. And then it’s done!
Ingredients:
- 1 can of unsweetened coconut milk
- 1 tablespoon of freshly squeezed lime juice (I found that it was basically equivalent to one half of a lime)
- 25 drops of liquid stevia (more or less, depending on preference)
- 2 teaspoons of vanilla extract
- 2 ripe Hass avocados, peeled, and pitted
Once all the ingredients are blended together, it’s technically ready to be eaten, but I personally like it best when it’s chilled in the fridge. I usually put it in and wait an hour or two and then have my pudding. But if you’re making ice cream, then this would be the time to put it in the ice cream maker.
The original recipe I worked off of can be found here. The only difference is that it calls for 80 drops of stevia and that is way too much for my taste. The first time I made it I did 30 drops, and after that I started using only 25, but it’s totally to your taste, so if you put in 25 and it’s not sweet enough, then put it more, because you shouldn’t be able to really taste the avocado at all. It should just taste like delicious creamy vanilla pudding!
