With all my food allergies, sensitivities, and dietary restrictions due to my mold treatment, I’m used to watching other people eat yummy food while I sip a nice glass of water. It’s something I’ve grown accustomed to over the years and it honestly doesn’t bother me anymore. Not only am I used to it, but with such a drastic change in my diet, with no sugar, carbs, or grains, I look at most food people eat and realize that even if I could have it…I have no desire to. Now that I know just how big a role food plays in my day-to-day health, I only want to put good things into my body. Which brings us to this little appetizer dish!

So my favorite thing about this recipe is that it only has three ingredients: avocado, bacon, and pepper. (All things I can eat!) I wanted to add the pepper so it could have a little more excitement to it, but it can totally be left out—it’s up to you and your dietary needs. Some people like to add chili powder, but that doesn’t work for me.

 

What you do:

 

  • Preheat oven to 425
  • Cover a baking sheet with foil or parchment paper
  • Slice the avocado and wrap each piece with half a piece of bacon
  • Sprinkle pepper on top
  • Bake for 12-18 minutes, depending on your preference for how cooked you want the bacon.

 

This is not only a yummy appetizer-type dish, but it can be a great food for parties! I’m always at a loss of what to bring to these sort of situations because often the foods I can eat aren’t easily portable, or if they are, no one else would want them. But with this it’s something I can eat, and something others without dietary restrictions can enjoy as well!
