Are you paleo? Low carb? No sugar? Allergic to everything? If so, this might be the food for you!!
1/2 cup shredded unsweetened coconut
1 tsp salt
1 tsp pepper
1 1/2 tsp paprika
package of chicken breast or thigh
What to do
Mix all the spices with the shredded coconut in a bowl. Roll the chicken tenders in the coconut and place on a foil-lined baking sheet. Bake at 425 for 15 minutes, flip them over and put back in for another 3-4 minutes.
It tastes so good!! In a past life I would have enjoyed them with ketchup, but with mold being in tomato sauce foods, and with the sugar in ketchup…nowadays I just eat them with mustard. And they are still fabulous!
One batch of the coconut stuff makes about one baking sheet worth of chicken tenders. So depending on how many people you are feeding, you might need to make multiple batches.
