Having such a limited diet makes it very hard to find dessert-like foods to eat. This, however, is hands down the best dessert I’ve made, and it’s SO easy!

Ingredients:

  • fresh strawberries (or fruit of your choice…I tried it with apricots and another time with mango, and they were both delicious!)
  • 1 packet of stevia
  • 1 teaspoon fresh lemon juice
  • one can of full fat unsweetened coconut milk
  • 1 teaspoon vanilla
  • ½ teaspoon sea salt
  • shredded coconut (optional)

 

Blend all the ingredients together and then pour into your ice cream maker. My ice cream maker takes about 15 minutes to get it to the right texture, and in the last few minutes I like to pour in the shredded coconut. This is also where you could pour in pieces of fruit or nuts, if desired.

Then spoon yourself a bowl of the delicious ice cream and enjoy!

For people without an ice cream maker (I was one of you…before I found this recipe and decided to buy one!) you can still make it…it’s just more effort. Mix all the ingredients together and then pour into a shallow pan covered in parchment paper. Place in freezer and let sit for 2-3 hours. Then put it in a blender that won’t break (trust me…I’ve broken a blender by doing this…make sure the one you’re using is alright to put ice in…) and then there you go. My main issue with this way was that it was very challenging for me to break the frozen ingredients into small enough pieces to place in the blender. But if you’re without an ice cream maker, this will work!
